Just west of Freeport on Hwy. 20 sits the iconic Horsepower Pavilion. British expatriates Kate and Freddie sold their business in England, moved to the Florida panhandle and purchased this distinctive property in 2023, complete with two, gold-gilded horses standing approximately 30 feet tall—an impressive feature that cost $83,000.
The couple established the restaurant and named it Hamilton’s Bistro after their 12-year-old son. The spacious venue features ample seating and an outdoor stage for musicians, creating an inviting atmosphere that even attracts neighborhood horses on Sundays for what Kate playfully refers to as “a bit of a brunch.”
Kate, who admits she’s working herself to death as she manages the bustling establishment, has assembled an impressive culinary team. Chef Tommy, who has built his reputation at various fine dining establishments throughout the area—including the former Pandora
Steakhouse in Destin, Barefoot Barbeque, Elmo’s, and Great Southern in Seaside—create exceptional dishes that keep patrons coming back.
The menu highlights include classic English fish and chips and a popular Sunday brunch featuring Kate’s legendary Bloody Mary cocktails. Currently operating on winter hours, Hamilton’s Bistro opens at 11 a.m. Thursday through Sunday.
All in all, Horsepower Pavilion offers a delightful destination for visitors seeking quality cuisine in a unique setting—the perfect place to enjoy a cold Stella Artois and some crispy fries while soaking in the distinctive ambiance.
